Description
Producers of some of the most popular Nova Scotia wines, Jost Winery uses a variety of grapes that has been cross-bred over a century ago to withstand the unpredictable Maritime climate, and thus is resistant to disease, requiring less spray and preservative. To fertilize the vines. Hans Christian Jost uses cow manure from a local beef farmer. A few years ago he took 600 tonnes of crab, lobster and oyster waste from a local fish processing plant to help fill his fields with nutrients, the benefits of which will last for decades.
